Treat yourself to the best cut on the whole block. Wagyu spinalis (aka ribeye cap steak) is the thin muscle layer on top of the fat cap that comes cleaned off the boneless ribeye roast. This cut of wagyu comes from Snake River Farms and is graded "Black" (8/9 score) which we can attest is ridiculously marbled and buttery. Sold in a petite 4oz portion is perfect for sneaking into a pan while you're in the kitchen tending to the bigger roast and the rest of the guests are setting the table, watching hallmark movies, playing badminton, whatever it is people do when I'm in the kitchen during the holidays because I have trust issues when it comes to nice cuts of meat and can't be more than 10 feet from the oven.
