We are sourcing our wagyu rib and sirloin roasts domestically this year from Snake River Farms who raise their cattle in the Cascade Mountains of Washington State. These roasts are graded as "Black" by Snake River which corresponds to a 8/9 score on the 1-12 quality scale used to grade wagyu. For comparison, typical USDA prime beef would land somewhere around a 5 on that scale.
These rib roasts are sold boneless and ready to roast or can but cut into steaks, just please specify if you would like them cut into steaks in the notes section at checkout or if you have any other special requests.
